Shrimp Tacos with Mango Slaw

INGREDIENTS:

  • 1 pound medium shrimp, peeled and deveined

  • 1 tablespoon olive oil

  • 1 teaspoon chili powder

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 2 cups shredded cabbage

  • 1 cup fresh mango, diced

  • 2 tablespoons lime juice

  • 1/4 cup sour cream

  • 2 tablespoons mayonnaise

  • 8 small flour or corn tortillas, warmed

  • 1/4 cup fresh cilantro, chopped

INSTRUCTIONS:

  1. In a bowl, toss shrimp with olive oil, chili powder, salt, and pepper. 

  2. Grill or sauté shrimp over medium-high heat for 2 to 3 minutes per side until pink and cooked through.

  3. In another bowl, combine shredded cabbage, diced mango, lime juice, sour cream, and mayonnaise to make the slaw. 

  4. Warm tortillas and fill each with a layer of mango slaw, a few shrimp, and a sprinkle of fresh cilantro. 

  5. As Serve immediately with extra lime wedges if desired
