Zucchini Fritters

INGREDIENTS:

  • 2 medium zucchini, grated

  • 1 teaspoon salt

  • 1/2 cup grated Parmesan cheese

  • 2 large eggs, lightly beaten

  • 1/3 cup all-purpose flour

  • 2 tablespoons fresh parsley or dill, chopped

  • 1/4 teaspoon black pepper

  • 2 tablespoons olive oil for frying

  • Sour cream or tzatziki for serving

INSTRUCTIONS:

  1. Place grated zucchini in a colander, sprinkle with salt, and let sit for 10 minutes. Squeeze out as much liquid as possible using a clean towel or paper towels. 

  2. In a bowl, combine zucchini, Parmesan, eggs, flour, herbs, and black pepper, mixing until well combined. 

  3. Heat olive oil in a skillet over medium heat. Drop heaping tablespoons of the mixture into the skillet, flattening slightly, and cook for 3 to 4 minutes per side until golden brown and crispy. 

  4. Serve hot with sour cream or tzatziki.
