Sweet Corn Fritters with Chili Lime Dip
INGREDIENTS:
2 cups fresh corn kernels, or frozen and thawed
½ cup all-purpose flour
½ teaspoon baking powder
½ teaspoon salt
¼ teaspoon black pepper
2 green onions, thinly sliced
1 large egg, beaten
¼ cup milk
2 tablespoons shredded Parmesan cheese, optional
2 tablespoons vegetable oil
INSTRUCTIONS:
In a medium bowl whisk together the flour, baking powder, salt, and pepper. Stir in the corn, green onions, egg, milk, and Parmesan if using. The batter should be thick and spoonable.
Heat the vegetable oil in a skillet over medium-high heat.
Drop heaping tablespoons of batter into the skillet and flatten slightly.
Cook for 2 to 3 minutes per side until golden brown and crisp.
Transfer fritters to a paper-towel-lined plate.
Serve the fritters hot with chili lime dip on the side.
Chili Lime Dip
INGREDIENTS:
½ cup sour cream or plain Greek yogurt
Zest and juice of 1 lime
½ teaspoon chili powder
Pinch of cayenne pepper, optional
Pinch of salt
INSTRUCTIONS:
combine sour cream, lime zest and juice, chili powder, cayenne if using, and salt in a small bowl. Stir until smooth.
